I’m the kinda girl that likes to be organised in the mornings. I like to wake up knowing that I’m prepped and ready to go. Minimum fuss = maximum sleep, amirite?! However, that being said, I’m not someone who can just skip breakfast to save on time. It’s therefore super important that I have an easy, quick, breakfast to go, otherwise I just end up snacking all morning! So, let me introduce you to my love, my Blueberry Chia and Coconut Overnight Oats recipe! I’ve used Alpro’s coconut and almond milk, which somehow I only discovered this week?! But my goodness, I LOVE the stuff. It compliments the blueberries perfectly. Plus, it’s healthy, nutritious, yummmyyyy and the whole recipe takes around 5 minutes to make. Give it a go next time you have an early start – you won’t regret it!

Blueberry Chia and Coconut Overnight Oats

Ingredients

1/2 cup quaker rolled oats
3/4 cup coconut and almond alpro
1 tbsp chia seeds
1 tsp pomegranate seeds
handful of blueberries
sprinkle of coconut shavings
1 strawberry (optional)

Recipe

1. Mix everything (besides the strawberry and coconut shavings) into a bowl or container that can be sealed tight.

2. Place in the fridge and leave overnight.

3. Top with strawberry and coconut shavings in the morning.

And that’s it! Easy eh? If you prefer thicker/thinner oats then adjust the measurements of milk according to your taste, and if you’re feeling in a particularly sweet mood, add a little drizzle of honey in the morning before you eat. It’s sooo tasty! Enjoy!
